Egg Shakshuka Recipe Video: My Cheesy One-Pan Method
I made this egg shakshuka in a small pan with the ingredients I already use in my kitchen: tomatoes, onion, garlic, eggs, coriander, green chilli, ghee and Indian spices. A cheese slice went into the sauce, then I added mozzarella on top. It is my home-style version, not a claim of strict traditional shakshuka.
What the video shows
I start by cooking garlic and one onion in two tablespoons of desi ghee. Two tomato halves then soften under a lid for roughly two to three minutes. Their skins come off, the flesh gets mashed directly in the pan, and salt, red chilli, coriander powder, turmeric and a little chicken masala build the sauce.
One cheese slice melts into that base before three eggs are cracked straight into the pan. I cook them gently under a lid, then finish with coriander, green chilli and mozzarella. The final combination was egg shakshuka with methi parathas, which suited a winter meal better than plain toast for me.
A couple of useful details
Keep the heat low after adding the eggs. A high flame can catch the tomato sauce before the whites set. Also use only a small splash of water, otherwise the eggs will sit in a thin gravy instead of a thick base.
If peeling tomatoes in the pan feels irritating, boil and peel them separately, then make a rough puree. Either route works. The direct method simply keeps this to one pan.
